French Gazpacho Soup



🛒Ingredients


  • 1 small English Cucumber, peeled and thinly sliced

  • Salt

  • 2 pounds ripe Tomatoes, peeled, seeded, and coarsely chopped

  • Pepper

  • 2 small spring Onions, finely chopped

  • A small handful of finely chopped Parsley, Chervil, and Chives

  • Juice of 1 Lemon

Prep Time: 20 min

❄️Chilling Time: 3 hours


🥣Instructions

1. In a colander, sprinkle the Cucumber slices with Salt and let drain for 1 hour in the refrigerator. Squeeze out as much water as possible from the Cucumber slices and pat dry with paper towels.

2. Puree the Tomatoes using a food mill or food processor. Season with Salt and Pepper.

3. In a bowl, combine the Tomatoes with the Cucumber, Onions, Herbs, and Lemon Juice. Season with Salt and Pepper. Cover and refrigerate until cold, 3 to 4 hours. Serve chilled.


💡Tips

  • If the Tomatoes don’t release enough liquid, you can add a little cold Water or Tomato Juice and adjust the seasoning.

  • The proportions of Vegetables and Herbs can vary according to your taste and availability. If you don’t have enough fresh Tomatoes, use Tomato Juice.
