Smoke Salmon Mousse

  • 8 ounces Cream Cheese

  • 8 ounces Cold-Smoked Salmon trimmings

  • Juice of 1/2 Lemon

  • Salt if needed

❄️Chilling Time: 2 hours


🥣Instructions

1. In a food processor, whip the Cream Cheese until light. With the machine running, add small chunks of Smoked Salmon and puree until smooth.

2. Add half of the Lemon Juice and pulse. Taste for seasoning, and add more Lemon Juice as needed. The Salmon should provide enough salt, but feel free to add more if you think the mousse needs it.

3. Press the mousse through a sieve if you would like a very fine, smooth texture, then pipe the mousse onto canapés or transfer to a mold.

💡Tips

  • You could make it more elaborate by putting out chopped fresh Dill, Capers, minced Red Onion, or any garnish you love on the Salmon.
