Apple Raisin Clafoutis

🛒Ingredients (Grocery List)

  • 3 tbsp Unsalted Butter, melted, plus more for brushing

  • 1/4 cup Sugar

  • Pinch of Salt

  • 1 large Egg

  • 1/2 cup Crème Fraîche or Heavy Cream

  • 1 1/2 tbsp All-purpose Flour

  • 2 or 3 Apples, peeled, cored, quartered, and thinly sliced

  • Lemon Juice for sprinkling

  • 1/4 cup Raisins, rinsed in warm Water

🥣Instructions

1. Preheat the oven to 400 degrees. Brush a round 8-inch gratin dish with Butter.

2. In a bowl, beat the Sugar with the Salt and Egg until light. Beat in the Crème Fraîche or Heavy Cream and Flour. Reserve 3 tablespoons of the Batter.

3. Fold the Apples, Lemon Juice, and Raisins into the batter. Scrape into the gratin dish. Transfer to the oven and bake for 15 minutes. Stir the melted Butter into the reserved batter and pour the mixture into the gratin dish. Increase the oven temperature to 425 degrees and bake for 15 minutes. Serve warm or at room temperature.


💡Tips

  • The Clafoutis can be assembled and then slid into the oven just before sitting down to eat.

  • You can flame this Clafoutis with Calvados or Apple Jack Liquor to a simmer in a small pan, then tilt and carefully ignite. Pour it flaming over the baked Clafoutis.
