Bacon Wrapped Meatloaf

  • 1 1/4 pounds Ground Beef

  • 1/2 cup dry Breadcrumbs

  • Salt and Pepper

  • 1/2-pound Bacon slices

  • 2 tbsp Butter, softened

🥣Instructions

1. Preheat the oven to 450 degrees. In a bowl, mix the Beef with the Breadcrumbs and season with Salt and Pepper. On a work surface, shape the mixture into a loaf.

2. On a large sheet of plastic wrap or wax paper, overlap the Bacon slices to form a rectangle. Set the Meatloaf on the Bacon and wrap the plastic around it, pressing to help the Bacon adhere. Peel off the plastic and reposition any slices of Bacon. Using long pieces of kitchen string, tie the Meatloaf at 1-inch intervals. Rub the Butter all over the Bacon and season with Salt and Pepper. Transfer to a baking sheet and bake on the to shelf of the oven for 20 minutes.

3. Transfer the Meatloaf to a cutting board and remove the string. Cover loosely with foil and let stand for 10 minutes. Cut the Meatloaf into thick slices, arrange on a heated platter, and serve.

  • The Breadcrumbs are essential for keeping the Meatloaf moist.

  • Using a serrated knife will make slicing the Meatloaf much easier.

  • Serve with sautéed Potatoes or with a good dish of Pasta.
