Pasta Salad

🛒Ingredients (Grocery List)


  • 12-ounce Corkscrew-shaped Pasta

  • 2 cups red grape Tomatoes, halved

  • 1 Red Bell Pepper, seeded and cut into strips

  • 1 Yellow Bell Pepper, seeded and cut in strips

  • 1 tbsp Lemon Juice

  • 1 Granny Smith Apple, peeled and cubed

  • 1 1/2 cup cubed Swiss Cheese

  • 1 cup Mayonnaise

  • Salt and Pepper

🥣Instructions

1. Bring a large pot of lightly salted water to a boil. Cook Pasta in the boiling water, stirring occasionally until cooked through but firm to the bite, 10 to 12 minutes. Drain and rinse under cold water.

2. Peel the Apple, remove the core, quarter and then cut the Apples into triangles or cubes, mix at once with the Lemon Juice.

3. In a large serving bowl, toss together the Pasta, the Red Bell Pepper, the Yellow Pepper, the Tomatoes, the Swiss Cheese, the Apple and the Mayonnaise, the Salt and Pepper.

4. Stir to coat well and evenly.

5. chill for at least 2 hours before serving.


💡Tips

  • Serve this salad as a starter, a summer lunch entrée, or a one-dish meal, or take to a picnic. If making into a meal-in-one dish, add 1 hard–boiled egg per person and some ham cubed.
