Gratinéed Creamed Spinach

🛒Ingredients (Grocery List)

  • 3 pounds Spinach, tough stems removed

  • 1 tbsp Butter

  • 1 slice Pancetta, cut crosswise into1/4-inch-thick strips

  • 1 Garlic clove, crushed

  • Salt and Pepper

  • 2 large Eggs

  • 1/4 cup Milk

  • 1/2 cup shredded Gruyère or Swiss Cheese, plus 1/2 cup shaved Gruyère

🥣Instructions

1. Bring a large pot of water to a boil. Add the Spinach and cook for 5 minutes. Drain and squeeze out as much water as possible. Coarsely chop.

2. In a flameproof casserole, melt the Butter over low heat. Add the Pancetta and cook until just beginning to brown. Add the Spinach and Garlic and Season with Salt and Pepper. Cover and cook for 15 minutes.

3. Preheat the oven to 425 degrees. Spread the Spinach mixture in a gratin dish. In a bowl, whisk the Eggs with the Milk and shredded Cheese. Pour this over the Spinach. Arrange the shaved Cheese in a decorative pattern on top. Transfer to the top shelf of the oven and bake until the Cheese is melted and nicely browned, 10 to 15 minutes.


💡Tips

  • If you like, you can use half shredded Gruyère and half grated Parmesan. Be careful that the Parmesan is not too strong or rancid. That happens sometimes; taste it first.

  • Frozen Spinach can also be prepared this way.
