Pot-Roasted Beef

🛒Ingredients (Grocery List)

  • 2 tbsp Butter

  • 1 tbsp Oil

  • 2-pound Beef Roast, such as eye of round, tied

  • Salt and Pepper

🥣Instructions

1. In a flameproof casserole, melt the Butter in the Oil over medium-high heat. Add the Beef Roast and brown it well on all sides for 5 minutes. Partially cover and cook for 25 minutes.

2. Transfer the Roast to a cutting board and remove the string. Season with Salt and Pepper. Cover loosely with foil and let stand for 10 minutes.

3. Add 1 or 2 tablespoons of water to the casserole and boil, scraping up any brown bits on the bottom, until slightly thickened. Taste for seasoning.

4. Carve the Roast across the grain into thin slices and transfer to a warmed platter. Serve, passing the pan juices separately.


💡Tips

  • It’s easier to brown the Beef in a skillet than in a casserole. The Meat colors better and you’re less likely to burn yourself. Transfer the browned meat to a casserole and continue with the recipe.
