Classic Endive Salad with Vinaigrette

  • 1-pound Endives, cored and sliced crosswise

  • 2 tsp Dijon Mustard

  • 4 tsp Red Wine Vinegar

  • 3 tbsp Neutral Oil, such as untoasted Peanut or Sunflower Oil

  • 1 tbsp extra Virgin Olive Oil

  • 1 small bunch Chives

  • Sea Salt

  • Fresh Pepper

  • Sea Salt

  • Fresh Pepper

🥣Instructions

1. In a salad bowl, whisk together the Mustard, Red Wine Vinegar, and a pinch of Sea Salt. Slowly whisk in the 3 tablespoons of Neutral Oil until the mixture has emulsified, then whisk in the Olive Oil. Taste for seasoning.

2. Mince the Chives and stir them into the Vinaigrette. Adjust the seasoning as needed.

3. Add the Endives to the bowl and toss, with salad servers until the leaves are thoroughly coated with the Vinaigrette.

4. Serve Immediately.


💡Tips

  • Discard any limp Endives leaves.

  • Don’t soak the Endives too long in water when you are cleaning them, or they may water down the Vinaigrette.

  • Mince the Chives right before you serve the Salad, to capture all their flavor.

  • With your Endive Salad, try other accompaniments, such as Walnut halves, sliced Apples, sliced or diced Beets, Potatoes, or Garlic croutons.
