Classic Green Salad with Vinaigrette

  • 1 head of butter, oak leaf, or your favorite Lettuce

(Preferably not a crisp one like Romaine), leaves separated, carefully rinsed, and spun dry

  • 2 tsp Dijon Mustard

  • 4 tsp Red Wine Vinegar

  • 3 tbsp Neutral Oil, such as untoasted Peanut or Sunflower Oil

  • 1 tbsp extra Virgin Olive Oil

  • 1 small bunch Chives

  • Sea Salt

  • Fresh Pepper

  • Sea Salt

  • Fresh Pepper

🥣Instructions


1. In a salad bowl, whisk together the Mustard, Red Wine Vinegar, and a pinch of Sea Salt. Slowly whisk in the 3 tablespoons of Neutral Oil until the mixture has emulsified, then whisk in the Olive Oil. Taste for seasoning.

2. Mince the Chives and stir them into the Vinaigrette. Adjust the seasoning as needed.

3. Add the Lettuce to the bowl and toss, with salad servers until the leaves are thoroughly coated with the Vinaigrette.

4. Serve Immediately.

  • Tear the Lettuce leaves into bite-size pieces before dressing them, so your guests get Lettuce they can maneuver into their mouths.

  • Never toss the Salad ahead of time. The vinegar “cooks” it, and the Lettuce quickly wilts. You can, however, make the Vinaigrette in advance. Crossing the Salad servers over the Vinaigrette and adding the Lettuce on top of them keeps the dressing and Lettuce separate until you are ready to toss and serve the Salad.

  • Mince the Chives right before you serve the Salad, to capture all their flavor.

  • Always toss Lettuce right before serving.

  • Dry the Lettuce very well so the water doesn’t dilute the Vinaigrette.
