Gribiche Sauce

🛒Ingredients (Grocery List)

  • 1 large, hard-boiled Egg Yolk

  • 1 tsp Dijon Mustard

  • 3/4 cup Vegetable Oil

  • 1 tbsp Red Wine Vinegar

  • 5 Cornichons, finely chopped

  • 5 Capers, chopped

  • 1 tbsp mixed finely chopped Parsley, Chervil, Tarragon, and Chives

  • Salt and Pepper

🥣Instructions

1. In a small bowl, mash the Egg Yolk with the Mustard. Blend in the Oil a few drops at a time to begin, then in a steady stream. Beat in the Vinegar, Cornichons, Capers, and Herbs. Season with Pepper and lightly, with Salt.


💡Tips

  • For the chopped Herbs, you can use all of them or only one, depending on what’s available.

  • You could also add Capers and the hard-boiled Egg white, finely chopped, at the same time as the Cornichons, as well as a squeeze of Lemon Juice.

  • Serve with cold fish, or calf’s head or feet.
