🛒Ingredients (Grocery List)

Meringue

  • 4 large Egg Whites

  • Pinch of Salt

  • 1 1/4 cups Sugar, plus more for sprinkling

Cake

  • 1/2 cup unbleached all-purpose Flour

  • 1/2 cup Sugar

  • 3 Eggs, at room temperature

  • 1/2 tsp Vanilla extract

  • 1/4 cup Liqueur Grand Marnier, or another Orange-flavored Liqueur

  • 1 pint Vanilla Ice Cream, Softened

🥣Instructions

1. Cake: With the rack in the middle position, Preheat the oven to 350 degrees. Line the bottom of an 8-inch springform pan with parchment paper. Do not butter sides.

2. In a bowl, combine Flour with 1/4 cup of Sugar. Set aside.

3. In another bowl, beat the Eggs, remaining 1/4 cup of Sugar and Vanilla with an electric mixer until it triples in volume and falls into a ribbon from the beater, about 10 minutes.

4. Sift dry ingredients over Egg mixture, folding gently with a spatula or whisk.

5. Spread batter into the pan, bake for 25 to 30 minutes or until a toothpick inserted in the center of the cake comes out clean.

6. Let cool for about 10 minutes. Side a thin knife around the cake to detach it from the pan. Unmold and let cool on a wire rack.

7. Meringue: In a medium bowl, beat the Egg Whites with the Salt at low speed until foamy. Beat in the Sugar 2 tablespoons at a time. Set the bowl over a saucepan of hot water and beat at high speed until tall peaks form when the beaters are lifted. Remove the bowl from the heat and continue beating until the meringue is cool. Cover and refrigerate.

8. Set the cake on a cardboard round. Using a serrated knife, split the cake in half horizontally. Brush the cut sides with the liqueur. Spread half of the Ice Cream over the bottom layer. Cover with the top layer and spread the remaining Ice Cream around the sides of the cake. Cover and freeze util the Ice Cream is firm

9. Preheat the oven to 450 degrees.

10. Using a thin spatula, roughly spread the cooked Meringue all over the top and sides of the cake; it shouldn’t be too smooth, sprinkle with Sugar. Transfer to an ovenproof platter and bake just until the top is golden. Serve immediately.
