Belgium Waffles

🥣Instructions

1. Preheat the oven to 225 degrees.

2. In a medium saucepan, combine the Milk with the Butter, Sugar, Vanilla Sugar, and Salt and bring to a bare simmer. Remove the pan from the heat and beat in the Eggs Yolks.

3. In a bowl, beat the Eggs Whites until stiff. Gently fold the beaten whites into the batter.

4. Heat and grease a waffle iron. Pour the batter into the iron and cook until the waffles are golden, 6 minutes. Transfer the Waffles to the oven. Repeat with the remaining batter. Dust the Waffles with sugar and serve Whipped Cream.

💡Tips

  • The batter can be prepared and refrigerated just before the meal but no longer or the beaten Egg Whites will deflate.

  • You can buy Vanilla Sugar in certain supermarkets, but it is easy to make your own. Split one Vanilla bean and scrape out the seeds, reserving them for another use. Place the scraped bean in a glass jar and cover it with 1 or 2 cups of Sugar. Shake it occasionally and leave it in your pantry. After a week or two, your sugar will be perfumed with the Vanilla.
