Classic Cheese Soufflé

  • 2 tbsp Butter, plus more for brushing

  • 2 tbsp all-purpose Flour

  • 1 cup Milk

  • Salt and Pepper

  • 3 large Eggs

  • 3/4 cup shredded Gruyère or Swiss Cheese

🥣Instructions

1. In a medium saucepan, melt the Butter over medium heat. Whisk in the Flour until it starts foaming. Whisk in the Milk. Season with Salt and Pepper. Bring to a boil, whisking. Reduce the heat to low and cook until thickens. Remove the pan from the heat and whisk in the Cheese.

2. Preheat the oven to 350 degrees. Generously Butter a large ramekin with tall sides around 5 to 7 inches deep.

3. Break the Eggs, adding the Whites to a large bowl and the Yolks to the saucepan with the sauce. Beat in the Yolks. Beat the Egg Whites with a pinch of Salt until stiff. Beat a quarter of the Egg Whites into the Yolk mixture, then fold this lightened mixture into the remaining Whites.

4. Scrape the Soufflé mixture into the soufflé dish. Bake in the oven until risen and browned, 25 to 30 minutes. Serve immediately.

💡Tips

  • Your Soufflé won’t rise properly unless the Egg Whites are beaten to very stiff peaks.

  • Before beaten them, add a pinch of Salt so they whip better.

  • Bake the Soufflé only when your guests have arrived, the 25–30-minute cooking time is precise. Remember that a Soufflé doesn’t wait, guests do.

  • Don’t start celebrating too early! Your Soufflé isn’t done just because it’s well risen. Wait a little. You can leave it in the oven longer than you think, and a Soufflé that’s cooked through doesn’t fall so quickly.
