Green Bean, Tuna and Bell Pepper Salad


🛒Ingredients (Grocery List)


  • 4 boiled Potatoes, peeled and sliced crosswise

  • 1-pound cooked French Green Beans

  • 4 Tomatoes, quartered lengthwise

  • 4 Hard-Boiled Eggs, quartered lengthwise

  • 2 can oil-packed Tuna, separated into large flakes, with oil

  • 2 Bell Pepper, cut into julienne strips

  • 1 English Cucumber, peeled and sliced crosswise

  • 1 small Spring Onion or sweet Onion, sliced crosswise and separated into rings

  • 15 oil-packed anchovies

  • 15 Black Olives

  • 2 tbsp Vinegar

  • 2 tsp Dijon Mustard

  • 1 tbsp Olive Oil

  • Salt and Pepper

🥣Instructions

1. In a small bowl, whisk the Vinegar with the Mustard. Blend in the Olive Oil and season with Salt and Pepper.

2. In a wide salad bowl or on a platter, mound the potatoes and arrange the Green Beans around them. Decorate with the Tomatoes, Eggs, Tuna, Bell Peppers, Cucumber, Onion, Anchovies and Olives. Drizzle with the Vinaigrette and serve.


💡Tips

  • If you like Garlic, toast several slices of baguette and rub them with Garlic cloves. Drizzle with Olive oil and add these garlic toasts to the bowl.

  • Serve this salad as a starter, a summer lunch entrée, or a one-dish meal, or take it to a picnic. If making it into a meal-in-one dish, cook 1 Egg per person and Increase the Tuna, Potatoes, and Vinaigrette accordingly.
