Sautéed Veal Chops Heavy Cream

4 Veal Chops or Cutlets
Salt and Pepper
All-purpose Flour for dusting
2 tbsp Butter
3 or 4 tbsp Crème Fraîche or Heavy Cream

🥣Instructions
1. Season the Veal with Salt and Pepper and dust with Flour, patting off the excess.
2. In a large skillet, melt the Butter over medium heat. Add the Veal and cook, turning once, until golden brown, 4 to 5 minutes per side, depending on the thickness. Transfer to a warmed platter.
3. Add the Crème Fraîche to the skillet and boil, scraping up any brown bits stuck to the bottom. Pour over the Veal and serve.
💡Tips
You may need to cook the Veal Chops or Cutlets in 2 batches if your skillet won’t hold the meat easily.
For a decadent addition, pour 1 or 2 tablespoons of Cognac or Armagnac into the pan when the Veal is nicely browned and bring it to a boil. Tolt the pan and carefully ignite the Cognac. When the flames subside, transfer the Veal to a platter and continue with the recipe.
