Easy Tomato Sauce

🛒Ingredients (Grocery List)

  • 1 1/2 pounds Tomatoes, quartered

  • 2 Onions, chopped

  • 1/2 Carrot, peeled and chopped

  • 1 Garlic Clove, crushed

  • 1 Bouquet Garni made with Parsley, Thyme, and Bay Leaf

  • Salt and Pepper

  • 1 tsp all-purpose Flour

  • 1 tbsp Butter, softened

  • Chopped Parsley leaves for sprinkling

🥣Instructions

1. In a large saucepan, combine the Tomatoes with the Onions, Carrot, Garlic, and the Bouquet Garni. Season with Salt and Pepper. Cook over medium heat, uncovered, for 45 minutes to1 hour.

2. Remove the Bouquet Garni. Puree the sauce using a food mill or food processor. Return the sauce to medium heat. In a cup, mash the Flour with the Butter. Gradually whisk this paste into the simmering sauce until it thickens slightly. Sprinkle with Parsley and serve.


💡Tips

  • The advantage of a food mill is that it strains out the Tomato skins and seeds. If you use a food processor to puree the sauce, you might want to peel and seed the Tomatoes first to get a smooth texture.

  • If the Tomato sauce stills looks watery after an hour of cooking, boil it for a few minutes until it thickens. On the other hand, if it looks plenty thick, do not add the Butter and Flour paste.

  • Serve with roasted meats, hard-boiled eggs or omelets, pasta, rice, or green beans.
