Beef Tongue with Madeira Sauce

🛒Ingredients (Grocery List)

  • Salt

  • 1 Beef Tongue, trimmed

  • 2 Carrots

  • 2 Leeks

  • 1 small Turnip

  • 1 Onion

  • 3 Garlic cloves, crushed

  • 1 Bouquet Garni made with Parsley, Thyme and Bay Leaf

  • 1 whole Clove

  • Pepper

🥣Instructions

1. Bring a large pot of Salted Water to a boil over medium-high heat. Add the Tongue and cook for 5 minutes, then drain. Return the Tongue to the pot and add the Carrots, Leeks, Turnip, Onion, Garlic, Bouquet Garni and Clove. Season with Salt and Pepper. Cover with cold Water, bring to a simmer over medium heat, and cook for 2 hours and 30 minutes.

2. Drain the Tongue. Trim it and peel. Cut into thin slices on the diagonal. Arrange the slices on a warmed platter and pour over some of Tomato sauce, passing the remaining sauce separately.


💡Tips

  • Serve with Pommes Duchesse. Pipe the Potatoes around a platter and arrange the slices of Tongue in the center.

  • To peel the Tongue, use a small, sharp knife to make an incision in the skin down the length of the Tongue without cutting into the meat. Pull off the skin.

  • Use the Tongue cooking liquid to make the Madeira sauce.
