Pound Cake

🛒Ingredients (Grocery List)

  • 5 tbsp unsalted Butter, barely melted, plus more for brushing

  • 2/3 cup all-purpose Flour, plus more for dusting

  • 2 large Eggs

  • 6 tbsp Sugar

  • 1/2 tsp Vanilla Sugar

  • 1/2 tsp Baking Powder

  • 2 pinches of Salt

🥣Instructions

1. Preheat the oven to 400 degrees. Butter a 7-to 8-inch springform pan or 8-inch loaf pan and dust with Flour, tapping out the excess.

2. In a medium bowl, beat the Eggs and Sugar with an electric mixer until the mixture falls from the beaters in a thick ribbon, beating in the barely melted Butter at the end.

3. In another bowl, whisk the Flour with the Vanilla Sugar, Baking Powder, and Salt. Gently fold into the Egg mixture. Scrape into the pan, transfer to the oven, and bake until the Pound Cake is golden, and a toothpick inserted in the center comes out clean, 40 to 45 minutes. Let cool for 5 minutes, then turn out onto a cake rack to cool completely. Cover with foil if it's beginning to brown.

💡Tips

  • Instead of Vanilla Sugar, you can flavor the pound cake with the finely grated zest of 1 Lemon or Orange.

  • Your cake will be lighter if you sift the Flour with the Baking powder. You can sift it directly over the beaten Egg mixture.

  • Add the ingredients in the order listed in the method for best results.

  • When the Pound Cake is completely cooled, wrap it in foil or plastic and refrigerate until serving. It stays moist for several days.
