Golden Potato Cake with Herbs

🛒Ingredients (Grocery List)

  • 1 1/4-pound baking Potatoes

  • Vegetable Oil for frying

  • 2 large Eggs, beaten

  • 1 or 2 Garlic cloves, finely chopped

  • 2 tbsp chopped Parsley leaves

  • 1tbsp all-purpose Flour

  • Salt and Pepper

🥣Instructions

1. Peel the Potatoes and coarsely shred them in a food processor or on a box grater. Rinse them in a colander under cold running water. Drain well, transfer to a large, clean kitchen towel, and squeeze dry.

2. In a large bowl, toss the Potatoes with the Eggs, Garlic Cloves, chopped Parsley and season with Salt and Pepper.

3. In a large skillet, heat a little Oil over medium-high heat until shimmering. Drop1 tablespoon of the Potato mixture into the skillet and flatten with the back of a spoon. Make about 3 more pancakes and cook until golden on the bottom, 3 to 5 minutes. Flip the pancakes and cook until golden. Repeat with the remaining Potato mixture, adding Oil as needed. Arrange on a warmed platter and serve hot.

💡Tips

  • Keep the Potato pancakes warm in a low oven or in between 2 plates set on top of a pan of simmering water.

  • Try mixing the Potato mixture with shredded Gruyère cheese and 1 or 2 pinches of freshly grated Nutmeg before frying.
