Roast Rabbit with Mustard

  • 4 pounds Rabbit Loin

  • Salt and Pepper

  • 2 tbsp Dijon Mustard

  • 1/4-pound Caul Fat

  • Chopped Parsley leaves for sprinkling

🥣Instructions

1. Preheat the Oven to 350 degrees. Season the Rabbit loin with Salt and Pepper. Brush with the Mustard. Wrap in the Caul Fat and set in a roasting pan. Transfer to the oven and roast for 40 to 45 minutes.

2. Transfer the Rabbit to a cutting board, cover loosely with foil, and let stand for 10 minutes.

3. Meanwhile, add 1/4 cup of Water to the roasting pan and bring to a boil, scraping up any brown bits stuck to the bottom, until slightly thickened and well flavored. Season with Salt and Pepper to taste.

4. Remove the Caul Fat from the Rabbit and transfer to a warmed serving dish. Pour the pan juices over the Rabbit, sprinkle with the Parsley and serve.

💡Tips

  • You can also roast a whole Rabbit. It’s less attractive but very good. Wrap the entire Rabbit, brushed with the Mustard, in the Caul Fat, which helps the Mustard keep all of its flavor and discourages it from drying out.
