Caramelized Apple Upside Down Tart

🛒Ingredients (Grocery List)

  • 6 tbsp Sugar

  • 3 tbsp Unsalted Butter, cut into 1/4-inch dice

  • 7 firm medium Apples, peeled, halved, and cored

  • Store bought Puff Pastry or Store-bought Pie Crust

  • Crème Fraîche or Sour Cream for serving

🥣Instructions

1. Spread the Sugar evenly in the bottom of an 8-inch-deep pan or a deep ovenproof skillet. Scatter the Butter over the Sugar. Arrange the Apple halves on their sides in the pan in concentric circles with all the Apples facing the same direction. Pack the Apples close together.

2. Set the pan over low heat and cook the Apples until the Butter melts. Increase the heat to medium and cook until the syrup becomes a thick, golden brown, about 20 minutes. Baste the Apples regularly with the syrup and press down slightly on the Apples. Be careful not to let the Caramel burn; adjust the heat if needed. Remove the pan from the heat and let cool slightly or completely.

3. Preheat the oven to 425 degrees. On a lightly floured work surface, roll the dough into a roundabout 1/4 inch thick about 2 inches larger than the pan. Wrap the dough around the rolling pan and set it on top of the Apples. Carefully push the edge down inside the pan. Refrigerate until ready to bake.

4. Transfer the pan to the oven and bake until the pastry is golden, about 20 minutes. Remove the tart from the oven. Immediately invert a round platter over the pan. Holding the pan and platter together, quickly invert the tart onto the platter. Serve warm or at room temperature, with the Crème Fraîche or Sour Cream.

💡Tips

  • Examples of fir, Apples are Golden Delicious, Fuji, Jonagold and Northern Spy.

  • If the Apples aren’t tender at the end of Step2, transfer the pan to the oven and bake until the Apples soften-before adding the dough.
