Tomato Soup

  • 4 Tomatoes, chopped

  • 4 Potatoes, peeled and Chopped

  • Salt and Pepper

  • Chopped Chervil or Parsley leaves for serving

🥣Instructions

1. In a large saucepan, combine the Tomatoes and Potatoes with 6 cups of water. Season with Salt and Pepper. Cover and bring to a boil over medium-high heat, the reduce the heat to low and simmer for 30 minutes.

2. Puree the soup using a food mill or blender. Return the soup to the pan and heat gently, then pour into a tureen, sprinkle with Chervil or Parsley and serve.


💡Tips

  • To give store-bought Tomato Soup a fresh flavor, add a peeled, finely diced Tomato to the soup and cook for 5 minutes before serving.

  • For a more elegant presentation, sauté cubes of crustless white Sandwich Bread in Butter until golden and pass them at the table along with the soup.
