Skate with Capers, Lemon, and Crispy Croutons


🛒Ingredients (Grocery List)

  • 4 pieces Skate Wing, not filleted (about 2 1/2 pounds in all)

  • 6 tbsp Vinegar

  • Salt

  • 1 Lemon

  • 8 tbsp (1 stick) Butter, cut into tablespoons

  • 3 slices of crustless Bread, cut into 1/4-inch dice

  • 2 tbsp Capers, drained

  • Chopped Parsley for sprinkling

🥣Instructions

1. In a large sauté pan, combine the Skate with Water to cover and 5 tablespoons of the Vinegar. Season with Salt. Bring to a simmer over medium heat, skimming, then reduce the heat to low and cook at the bare simmer for 15 minutes. Using a slotted fish slice, transfer the Skate to a platter linen with paper towels. Remove the skin, if any. Transfer to a warmed serving dish and sprinkle with the remaining 1 tablespoon of Vinegar.

2. Using a sharp knife, peel the Lemon, removing all of the white pitch. Cut in between the membranes to release the sections. Cut the sections into 1/4-inch dice.

3. In a large skillet, melt the Butter over medium heat. Add the Bread and cook until golden brown all over. Add the Capers and Lemon dice and heat through. Pour over the Fish, sprinkle with Parsley, and serve.

💡Tips

  • Don’t worry if your Skate has a faint Ammonia smell; it’s not bad. Skate is the only fish that benefits from brief aging. In fact, its firm and elastic flesh is more tender after few days.
