Normandy Chicken


🛒 Ingredients (Grocery List)

  • 3 tbsp Butter

  • 1 tbsp Vegetal Oil

  • 8 Chicken Thighs

  • Salt and Pepper

  • 1/4 cup Calvados or Apple Jack

  • 4 Apple Granny Smith, peeled, cored, and quartered

  • 1/2 cup Golden Raisin

  • 3/4 cup Crème Fraîche or Heavy Cream

  • 1-pound White Mushrooms

🥣Instructions

1. In a large skillet, melt 3 tablespoons of the Butter in the Oil over medium heat. Add the Chicken and cook all sides without until lightly browned. Season with Salt and Pepper and 1/2 cup of Water. Increase the heat to medium-high, add the Calvados or the Apple Jack, and bring to a boil, then tilt the pan and carefully ignite. When the flames subside, reduce the heat, and add the Apples and the golden Raisin. Stir carefully, cover and cook for about 15 minutes.

2. Add the Mushrooms on the top, cover and cook for another 10 minutes.

3. Transfer the Chicken to a warmer platter.

4. In the saucepan add the Crème Fraîche to the Apples, Mushrooms and Raisins mixture. Heat on medium-low heat for 10 minutes.

5. Pour the sauce with the Apples, Mushrooms and Raisins over the Chicken and serve.
