Ham Stuffed Eclairs

Puff Pastry


  • 5 tbsp (1/2 stick plus 1 tbsp) Butter, diced

  • 2/3 cup of Water

  • 1/2 tsp Salt

  • 2/3 cup all-purpose Flour

  • 3 large Eggs

Filling


  • 1 1/2 tbsp Butter, plus more for brushing

  • 1 1/2 tbsp all-purpose Flour

  • 1 cup Milk

  • 2 thin slices of Ham chopped

  • Salt and Pepper

🥣Instructions

1. Preheat the oven to 400 degrees.

2. Position 2 racks in the upper and lower third of the oven. Lightly brush 2 baking sheets with the Butter.

3. Make the Puff Pastry: In a saucepan, bring 2/3 cup of Water, the Butter, and Salt to a boil. Remove the pan from the heat, add all the Flour at once, and beat well using a wooden spoon. Return the pan to low heat and beat until the dough is smooth and pulls away from the pan to form a ball. Off the heat, add the Eggs, 1 at a time, beating well after each addition.

4. Using a pastry bag or 2 spoons, pipe or spoon 9 or 10 éclairs well apart on each baking sheet. Bake for 20 minutes, shifting the pans hallway through, until the éclairs are risen and golden. Transfer to a rack and let cool.

5. Meanwhile, make the filling: In a small saucepan, melt the Butter over medium heat. Whisk in the Flour until starts foaming. Whisk in the Milk. Season with Salt and Pepper. Bring to a boil, whisking, then reduce the heat to very low and cook for 10 minutes. Remove the pan from the heat and whisk in the Ham.

6. Cut a thin slice off the top of each éclair, keeping it attached. Carefully pipe or spoon some of the filling into each éclair, then close.

7. Serve warm or at room temperature.


💡Tips

  • Before removing your éclairs, from the oven, test for doneness by tapping them; they should be firm.
