Veal Chops Stuffed with Smoked Ham and Gruyère

  • 4 thick Veal Chops

  • 4 thin slices of Smoked Ham or Canadian Bacon

  • 1/2 shredded Gruyère Cheese

  • Pepper

  • 3 tbsp Butter

  • Salt

  • 1 Lemon. Halved

🥣Instructions

1. Preheat the oven to 425 degrees. Using a thin, sharp knife, cut a pocket in each Veal Chops, cutting horizontally to the bone. Tuck a Ham or Bacon Slice in each and spread with 2 pinches of Cheese. Season the pockets with Pepper. Press on the chops to close, or seal with toothpicks.

2. In a large skillet, melt 2 tablespoons of Butter over medium heat. Cook the chops, turning once, until golden brown, about 5 minutes preside. Season with Salt and Pepper. Reduce the heat to low, cover, and cook for 5 to 10 minutes, depending on the thickness.

3. Transfer the chops to a gratin dish the remaining Cheese and dot with the remaining 1 tablespoon of Butter. Roast on the top shelf of the oven for 10 minutes. Sprinkle with Lemon Juice and serve.


💡Tips

  • This delicious dish makes a big impression for something that is so easy to prepare. This’s not for every day because it’s pretty expensive, but whenever it is served it’s a hit.

  • You can ask your butcher to cut a pocket in the chops. He will do it better than you can.

  • Also, you may roast 4 whole Tomatoes in the oven 5 minutes before adding the Chops. They will be ready at the same time and make a nice accompaniment.
