Gratinéed Hard Boil Eggs with Creamy Spinach

  • 3 pounds Spinach, tough stems removed

  • 5 tbsp Butter

  • 1 Garlic clove, chopped

  • Salt and Pepper

  • 6 large Eggs

  • 3 tbsp all-purpose Flour

  • 2 cups Milk

  • 1/2 cup Shredded Gruyère Cheese

🥣Instructions

1. In a large pot of boiling Salted Water, cook the Spinach for 5 minutes. Drain and squeeze out as much of the water as possible. Coarsely chop the Spinach.

2. In a saucepan, melt 2 tablespoons of the Butter over very low heat. Add the Spinach and Garlic and Season with Salt and Pepper. Cook for 30 minutes.

3. Meanwhile, in a small saucepan, cover the Eggs with cold salted water. Bring to a boil, then cook the Eggs at a gentle boil for 10 minutes. Drain and run cold water into the pan to make the Eggs easier to peel.

4. In a medium saucepan, melt the remaining 3 tablespoons of Butter over medium heat. Whisk in the Flour until it starts foaming. Whisk in the Milk and season with Salt and Pepper. Bring to a boil, whisking. Cook over low heat, whisking, until thickens.

5. Preheat the Broiler. Peel the Eggs and halve them lengthwise. Stir half of the sauce into the Spinach and spread in a gratin dish. Arrange the Eggs halves in the dish and cover with the remaining sauce. Sprinkle with the Cheese. Broil on the top shelf of the oven until lightly browned, then serve.
