Marinated Pork Roast with Golden Sliced Potatoes

🛒Ingredients (Grocery List)

  • 2 pounds boneless Pork Roast

  • 2 tbsp Butter, plus more for brushing

  • 2 pounds Potatoes, peeled and thinly sliced

  • 3 Onions, thinly sliced

  • Salt and Pepper

  • 1Thyme sprig

  • 1/2 Bay leaf

  • 2 whole Cloves

Marinade

  • 1 Onion, sliced

  • 4 whole Cloves

  • 1 tbsp Oil

  • Thyme sprigs

  • Bay Leaf

  • 3/4 cup dry White Wine

  • Pepper

Plus, overnight marinating


🥣Instructions

1. In a large bowl, combine the Pork with the marinade ingredients. Cover and refrigerate overnight, turning the meat occasionally.

2. Generously brush the bottom of a flameproof with Butter. In it layer half the Potatoes and Onions. Season lightly with Salt. Brush the marinade off the Pork and set it on top of the Potatoes. Cover with the remaining Potatoes and Onions and season with Salt and Pepper. Add the Thyme, Bay Leaf, and whole Cloves. Strain the marinade into the casserole. Dot with the Butter. Cover and cook over low heat for 2 hours.


💡Tips

  • You could also cook the Pork in a 350-degree oven instead of on top of the stove.

  • If the Potatoes start to stick to the bottom of the casserole on your stove’s lowest heat, set a heat diffuser on the burner. It’s very effective against little cooking accidents-always a possibility with long-simmered dishes that you get tired of checking.
