Bake Ham Steaks with Creamy Spinach

🛒Ingredients (Grocery List)

  • 4 Ham Steaks, about 1/2 pound each, cut 1/4 inch thick

  • 1/4 cup Port

  • 3 1/2 pounds Spinach, tough stems removed

  • 2 tbsp Butter

  • 3 tbsp Crème Fraîche or Heavy Cream

  • Salt and Pepper

🥣Instructions

1. Preheat the oven to 150 degrees. Spread the Ham slices in a gratin dish. Add the Port, cover with foil, and bake for 20 to 25 minutes.

2. Meanwhile, bring a large pot of Water to a boil. Add the Spinach and cook for 5 minutes. Drain in a colander and press on the Spinach to remove as much as much water as possible. Coarsely chop the Spinach.

3. In a flameproof casserole, melt the Butter over medium-high heat. Add the Spinach and cook for 2 to 3 minutes, stirring, to dry it out a bit. Add the Crème Fraîche and season with Salt and Pepper. Reduce the heat to low, cover, and cook for 10 minutes.

4. Spread the Spinach on a large, warmed serving dish. Arrange the Ham slices on top, pour in the cooking juices, and serve.


💡Tips

  • It takes some effort to clean, blanche, drain, and cook all the Spinach, but this dish is easily made by a beginner. Or you could try a little less baby Spinach, which usually doesn’t need to be stemmed or cleaned, though it is more expensive.

  • Instead of Port, you can use another sweet or fortified Wine, such as Madeira, Muscat, or Vermouth.
