Smoked Herring and Potato Salad with Mustard Vinaigrette

  • 3 pounds waxy Potatoes, peeled

  • 2 tsp Coarse Salt

  • 2 tbsp Red Wine Vinegar

  • Fine Sea Salt

  • 2 tsp Dijon Mustard

  • 3 large Shallots, sliced finely

  • 3 tbsp Vegetal Oil

  • 1 tbsp Olive Oil

  • Freshly ground Black Pepper

  • 1 medium Red Onion sliced finely

  • 4 fillets Smoked Herring cut into 1/2-inch cubes

  • 1/2 cup Fresh flat-leaf Parsley leaves

🥣Instructions

1. Place the Potatoes in a large saucepan, cover them by 1 inch with water, add 2 teaspoons coarse Salt, and bring the water to a boil over medium-high heat. Lower the heat so the Water is simmering merrily and cook the Potatoes until they are tender through but not overly soft, 15 to 20 minutes. Drain the Potatoes.

2. While the potatoes are cooking, make the Vinaigrette: Whisk together the Vinegar and Salt in a large bowl. Whisk in the Mustard and the Shallots, then slowly whisk in the Oils until the Vinaigrette is emulsified. Whisk in the Pepper to taste.

3. When the Potatoes are cool enough to handle, slice them into 1/2-inch-thick rounds and fold them into the Vinaigrette. Either let the Potatoes cool, or immediately fold in the Onion and the Herring and let the Salad sit while you mince the Parsley leaves. Add them to the salad, folding gently, and serve.

💡Tips

  • If you want a warm to hot dish, then mix up the ingredients while the Potatoes are hot and serve immediately.
