Stuffed Zucchini

🛒Ingredients (Grocery List)

  • 4 Large Zucchini

  • 6 tbsp Milk

  • 1/2 cup dry Breadcrumbs

  • 3 tbsp Butter

  • 1 Onion, finely chopped

  • 2 cups chopped leftover Meat or 1 pound Ground Beef

  • 1 large Egg

  • Chopped Parsley leaves and Chives

  • Salt and Pepper

🥣Instructions

1. Slice the Zucchini in half lengthwise. Using a spoon, hollow out the insides, leaving a sturdy shell.

2. In a small saucepan, warm the Milk. Add the Breadcrumbs and let soak, the squeeze dry, discarding the excess Milk.

3. In a large skillet, melt 1 tablespoon of the Butter over medium-low heat. Add the Onion and cook until softened. Remove the pan from the heat and mix in the soaked Breadcrumbs, chopped Meat, Egg, and Herbs. Season with Salt and Pepper.

4. Stuff the Zucchini with the Meat mixture, mounding it slightly. In a flameproof casserole, melt the remaining 2 tablespoons of the Butter over medium-high heat, Add the stuffed Zucchini, cover, and cook for a few minutes, until lightly browned, then reduce the heat to low and cook for 40 to 45 minutes. Transfer the Zucchini to a serving dish and serve.

💡Tips

  • When you hollow out the Zucchini, you lose mostly seeds, so it’s not wasteful. If you don’t have any meat leftover, you can replace it by ground beef or Italian sausage.
