Gruyère Cheese Tart

Flaky Tart Pastry

  • 1 1/4 cups all-purpose Flour

  • 1/2 tsp Salt

  • 8 tbsp (1 stick) unsalted Butter, cut into pieces

Filling

  • 1 1/2 tbsp Butter

  • 1 1/2 tbsp all-purpose Flour

  • 1 cup Milk

  • Salt and Pepper

  • 1 cup shredded Gruyère Cheese

  • 1 large Egg, lightly beaten

🥣Instructions

1. Make the Flaky Tart Pastry: In a bowl, combine the Flour with the Salt and Butter. Rub the Butter into the Flour between your palms. Sprinkle over 1/4 cup of Water and knead briefly until large crumbs form. Press into a disk. On a lightly floured surface, scrape the dough away from you with the heel of your hand in a long sliding motion, then press into a disk: repeat 3 times. Wrap and refrigerate until firm, 15 to 20 minutes.

2. Meanwhile, make the filling: In a medium saucepan, melt the Butter over medium heat. Whisk in the Flour until starts foaming. Whisk in the Milk and season with Salt and Pepper. Bring to a boil, whisking, then reduce the heat to low and cook until thickens. Remove the pan from the heat and stir in the Cheese and Egg.

3. Preheat the oven to 400 degrees. On a lightly floured work surface, roll the dough into a roundabout 1/8 inch thick and line 8 tartlet pans. Trim off any excess. Use the scraps to patch any cracks. Prick holes all over the bottom of the tartlet shells with a fork.

4. Spread the filling in the tartlet shells. Transfer to a baking sheet and bake in the oven until lightly browned. About 25 minutes. Serve the tarts hot, warm, or at room temperature.

💡Tips

  • These tarts can be prepared and baked an hour ahead of time and reheated just before serving. So, it’s a very practical recipe for when you guests coming for lunch or dinner. These tart s warm are easy to serve and eat out of hand while standing.
