Stuffed Tomatoes with Shrimp


🛒Ingredients (Grocery List)

  • 4 medium Tomatoes

  • Salt

  • 1/4 pound small, cooked, shelled Shrimp

  • Parsley sprigs


Mayonnaise


  • 1 large Egg Yolk

  • 1 tsp Dijon Mustard

  • 3/4 cup Oil

  • 1 tbsp Vinegar

  • Salt and Pepper

🥣Instructions

1. Cut a thin slice off the top of each Tomato. Using a spoon, hollow out the insides, leaving a sturdy shell. Sprinkle with Salt and turn upside down on a plate to drain.

2. Meanwhile, make the Mayonnaise: In a small bowl, whisk the Egg Yolk with the Mustard. Blend in the Oil a few drops at a time to begin, then in a steady stream. Beat in the Vinegar and season with Salt and Pepper.

3. In a bowl, fold 1/2 cup of the Mayonnaise into the Shrimp. Stuff the Tomatoes with the Shrimp salad. Mounding it slightly. Decorate with Mayonnaise rosettes and Parsley sprigs. Transfer to a platter and serve.

💡Tips

  • You can use store-bought Mayonnaise to make the Shrimp salad instead.
