Aïoli

🛒Ingredients (Grocery List)

  • 5 to 7 Garlic cloves

  • 1 large Egg Yolk

  • 1 1/2 cups Olive Oil

  • 1 tbsp fresh Lemon juice

  • Salt and Pepper

🥣Instructions

1. Using a mortar or small food processor, grind the Garlic to a paste. Add the Egg yolk, Salt and Pepper and puree. Blend in the Olive Oil a few drops at a time to begin, then in a steady stream. Beat in 1 tablespoon of boiling water and the Lemon juice.

💡Tips

  • Since this is a kind of Mayonnaise, the same precautions apply. All the ingredients need to be at the same temperature.

  • You can use more or les Garlic to taste.

  • Serve with all cold meats, cold poached fish, hard-boiled eggs, cod, boiled beef, or vegetables.
