Classic Grand Marnier Soufflé

  • 2 tbsp Unsalted Butter, plus more for brushing

  • 2 1/2 tbsp All-purpose Flour

  • 1 cup Milk

  • 6 tbsp Sugar

  • 4 large Eggs, separated

  • 1/4 cup Grand Marnier

  • Pinch of Salt

🥣Instructions

1. Preheat the oven to 350 degrees. Brush a soufflé dish with Butter.

2. In a large saucepan, melt the 2 tablespoons of Butter over medium heat. Whisk in the Flour until it starts foaming. Add the Milk and Sugar and bring to a boil, whisking constantly, then reduce the heat to very low and cook, whisking for 2 to 3 minutes. Remove the pan from the heat and whisk in the Egg Yolks and Grand Marnier.

3. In a bowl, beat the Egg Whites with the Salt until foamy, then beat at high speed until stiff. Beat one-quarter of the beaten Whites into the Soufflé base, then fold this lightened mixture into the remaining Whites.

4. Scrape the Soufflé mixture into the soufflé dish, filling it three-quarters full. Transfer to the oven and bake until puffed and browned, about 30 minutes. Serve immediately.


💡Tips

  • You can use any favorite liqueur to flavor this Soufflé.

  • If you’d like the Soufflé to rise evenly, run a table knife around the edge to make a groove.

  • Everybody knows the trick to making a Soufflé is getting organized. If it waits in the oven 15 minutes too long, it will fall. A good tip: Scrape the Soufflé into the dish and refrigerate just before the meal, then heat the oven just before sitting down. When you’ve served the main course, that is half an hour before dessert, bake the Soufflé in the oven.
