French Puff Pastry

  • 2 cups All-purpose Flour

  • 1/2 tsp Salt

  • 3/4 cup (1 1/2 sticks) Unsalted Butter

🥣Instructions

1. Mound the Flour on a work surface. Make a well in the middle of the Flour and add the Salt and 1/2 cup of cold Water. Gradually incorporate the Flour. Cut the dough several times with a dough scraper to blend the ingredients but not knead it. Press into a disk, wrap, and refrigerate for15 minutes.

2. Pound the Butter to make a pliable, 6-inch square; it should have the same firmness as the chilled dough. On a lightly floured work surface, using a lightly floured rolling pin, roll out the dough to a 12-inch round. Set the Butter in the center of the dough, fold the dough over the Butter, and press to seal. Turn the package over and roll into a rectangle. Fold over itself into thirds. Turn the dough so the folded edges are to the left and right. Roll out and fold the dough a second time; wrap and refrigerate for 10 to 15 minutes. Repeat the rolling, folding, and turning 2 more times and refrigerate. Repeat for a total of 6 times.

3. Refrigerate the tart shell for an hour before baking.
