Gratinéed Hard Boiled Eggs with Gruyère

  • 4 large Eggs

  • 3 tbsp Butter

  • 3 tbsp all-purpose Flour

  • 2 cups Milk

  • Salt and Pepper

  • 1/2 cup shredded Gruyère or Swiss Cheese

🥣Instructions

1. In a large saucepan, cover the Eggs with cold water. Bring to a boil, then cook the Eggs at a gentle boil for 10 minutes. Drain and run cold water into the pan to make the Eggs easier to peel.

2. Meanwhile, in a small saucepan, melt the Butter over medium heat. Whisk in the Flour until starts foaming. Whisk in the Milk. Season with Salt and Pepper. Bring to a boil, whisking, then reduce the heat and cook for 10 minutes.

3. Preheat the broiled peel the Eggs and halve them lengthwise. Spread half of the sauce in a gratin dish. Arrange the Eggs on top and spoon the remaining sauce over them. Sprinkle with the Cheese. Broil the Eggs on the top shelf of the oven until lightly browned, then serve.

💡Tips

  • Add a smidgen of freshly grated nutmeg to the sauce. It’s delicious.

  • You can bake the gratin in a hot oven if you don’t have a broiler. But not for too long, or the sauce will curdle.
