Pesto

🛒Ingredients (Grocery List)

  • 2 cups fresh Basil leaves, (no stems). You can sub half of the Basil leaves with Baby Spinach.

  • 1/2 freshly grated Romano or Parmesan Cheese

  • 1/2 cup Extra Virgin Olive Oil

  • 1/3 cup Pine Nuts (you can sub with chopped Walnuts)

  • 3 Garlic Cloves, minced

  • 1/4 tsp Salt, or more to taste

  • 1/8 tsp Freshly ground Black Pepper, or more to taste

🍴Serves: 1 cup

⏰Prep Time: 15 min

🥣Instructions

1. Place the Basil leaves and Pine Nuts into a bowl of a food processor and pulse several times.

2. Add the Garlic and Parmesan or Romano Cheese and pulse several times more. Scrape down the sides of the food processor with a rubber spatula.

3. While the food processor is running, slowly add the Olive Oil in a steady small stream. Adding Oil slowly while the processor is running will help it emulsify and help keep the Olive Oil from separating. Occasionally, stop to scrape down the sides of the food processor.

4. Add Salt and freshly Ground Black Pepper to taste.

💡Tips

  • Serve with Pasta, Salad, Soups, Meats, dollop over Baked Potatoes or spread onto Crackers or toasted slices of Bread.

  • You can also add peeled, seed, and chopped Tomatoes to the mix with the Basil.
