Apples Fritters

1 cup All-purpose Flour
Salt
1 large whole Egg, plus 2 large Egg whites
1 tbsp Vegetable Oil
1/2 to 2/3 cup Beer or Water
1-pound Apples, peeled, cored, and sliced crosswise 1/4 inch thick
4 cups Vegetable Oil for frying
Sugar for sprinkling

🥣Instructions
1. Make the fritter batter. In a large bowl, whisk the Flour with 1/4 teaspoon of Salt, the whole Egg, and Oil. Gradually whisk in the 1/2 cup of Beer or Water. The mixture should be thicker than a Crêpe batter. Cover and let stand for 1 hour.
2. Just before using, beat the Egg Whites with a pinch of Salt until foamy, then beat at high speed until stiff. Fold into the batter.
3. In a large skillet, heat the Oil to 375 degrees. Using a fork, dip the Apple slices one at a time in the batter. Gently drop them into the Oil without crowding, fry the Apples, turning them once, until puffed and golden, 1 to 3 minutes total. Using a slotted spoon, transfer the fritters to paper towels to drain. Keep warm in a low oven while frying the remaining Apples. Sprinkle with Sugar and serve very hot.
💡Tips
Traditionally, fritter batter is made with Beer, but you can add milk or even water. You can also replace one-quarter of the flour with potato starch. I often flavor my batter with a little rum.
The beaten Eggs Whites make a lighter fritter.
You can also make pear, apricot, and banana fritters.
