Souffléed Mère Poulard Omelet

🛒Ingredients (Grocery List)

  • 6 large Eggs, separated

  • 2 tbsp Crème Fraîche or Heavy Cream

  • Salt and Pepper

  • 3 tbsp Butter

  • Mixed chopped Parsley, Chervil, and Tarragon, for sprinkling

🥣Instructions

1. In a bowl, beat the Egg yolks lightly with the Crème Fraîche and season with Salt and Pepper. In another bowl, beat the Egg Whites with a little Salt and Pepper until frothy.

2. In a large skillet, melt the Butter foams, pour in the Yolks, then the whites, and cook, pulling the Egg that is cooking at the sides of the pan toward the center and tipping the pan to allow the uncooked Egg to flow underneath. When the edges are set, and the center is still creamy. Fold the Omelet in half and slide it onto a warmed platter. Sprinkle with the Herbs and serve at once.

💡Tips

  • The egg whites should not be beaten until stiff, but only lightly, as for a regular omelet.
